Our only Caribbean coffee, this limited offering from a family-owned farm is shade-grown and harvested at a high altitude. Red Honey is made using a 24-hour fermentation on the coffee fruit that allows enzymes to break down mucilage, bringing out sweetness and fruitiness while maintaining uniformity. The farm uses fermented coffee cherries to create natural gas, which powers their operation.
